Gavilan College was established in the year 1919. Originally, the community college was named San Benito County Junior College at the time of its inception. The college campus spread over 2,700 square miles in area. This included the major part of the San Benito County and the southern part of Santa Clara. In 1997, at Hollister and Morgan Hill, more instructional sites were constructed to add to the existing offerings that the main campus of the Gavilan College had to give. By the end of 2017, Phase 1 of the Coyote Valley Center was completed, which marked itself as the home for South Bay Public Safety Training and the newest instructional site for the Gavilan College.

The Gavilan College has received accreditation from the Accrediting Commission for Community and Junior Colleges (ACCJC) of the Western Association of Schools and Colleges or the WASC. For a six-year cycle, the self-study process laid out by the ACCJC defines the overall performance of the college and checks whether or not it lives up to the standards set by the ACCJC. The college offers Associates of Science and Associates of Arts degrees along with certificates in a plethora of different career fields.
